Hyatt Hotels Corporation has announced the global rollout of Verdant, its innovative plant-based fine dining concept. Following successful pilots in New York, London, and Singapore, the brand will introduce Verdant to 50 properties worldwide by the end of 2026.

Verdant offers an elevated plant-based dining experience that goes beyond traditional vegetarian options. Each location features locally inspired menus developed in partnership with renowned plant-based chefs.

'Guest demand for sophisticated plant-based dining has grown exponentially,' said Amy Weinberg, SVP of Food and Beverage at Hyatt. 'Verdant represents our commitment to culinary innovation and sustainability.'

The concept includes wine pairings focused on organic and biodynamic selections. Initial guest response has been overwhelmingly positive, with many locations reporting 85% occupancy rates.
